Creamy Poppy Seed Coleslaw!

When I was a young man, I got a job at a barbecue restaurant. This barbecue restaurant in Milwaukie, Oregon served the absolute best cabbage slaw that I had ever had!

I had to learn how to replicate the flavors and texture. I think I’ve just about got it.

My wife told me many times that she did not like coleslaw. After I made this very recipe for her, she was a true believer!

Coleslaw Ingredients

INGREDIENTS FOR CREAMY POPPY SEED COLESLAW:

  • Cabbage
  • Mayonnaise
  • Apple cider vinegar
  • Honey
  • Salt
  • Pepper
  • Poppy seeds
  • Optional: Shredded apples
  • Optional: Purple cabbage

The mayo adds a special creaminess to the slaw. While the vinegar adds some bite and acidity, as well as a mellow apple flavor.

Honey is a must as the sweetness and depth of flavor it brings is to die for!

Poppy seeds are a tough call. Earthy, mild, and crunchy, but try this without the poppy seeds and you’ll want to put some in!

HOW TO MAKE CREAMY POPPY SEED SLAW:

Begin adding ingredients for the dressing!

Begin with the simple step off adding all of the ingredients together for the dressing.

  • 1 cup mayonnaise
  • 1/4 cup honey
  • 1/4 cup apple cider vinegar
  • 3 tablespoons poppy seeds
  • 1 1/2 teaspoons salt
  • 1 teaspoon ground black pepper

Whisk the ingredients up and the dressing is completely done!

The honey won’t stick to a measuring cup that has a coating of oil.

As an added tip, when measuring honey, rub a little oil on the measuring cup before you put your honey in.

The honey will slide right out! No messing with a spatula or getting your fingers sticky.

Just add any oil that won’t compromise the recipe in a bad way.

Mix all of the ingredients for the dressing together!

Now whisk it up!

A mandolin makes slicing cabbage much easier.

Slice the cabbage in half and cut the core or stem out of the cabbage.

Next slice up your cabbage as fine as you can get it. Or about 1/8 inch thick.

I like to use a mandolin as it makes slicing extremely easy.

You can see how thin the cabbage is slices. This is important to the texture of this dish.

After the cabbage is sliced, add the dressing to the cabbage and mix it up together!

HOW TO STORE COLESLAW

Coleslaw will stay good in the refrigerator for up to a week. It is at its best quality the first 2 days.

Cover with an airtight cover or place in an airtight container and store in the refrigerator.

Ingredients

  • Poppy Seed Dressing:
  • 1 cup mayonnaise
  • 1/4 cup apple cider vinegar
  • 1/4 cup honey
  • 3 tablespoons poppy seeds
  • 1 1/2 teaspoons salt
  • 1 teaspoon pepper
  • 1 medium to large head of green cabbage
  • Optional: Shredded apples, purple cabbage

Instructions

  1. Mix together mayonnaise, apple cider vinegar, honey, poppy seeds, salt, and pepper. Whisk together!
  2. Slice head of cabbage into 1/8-inch shreds.
  3. Pour dressing into the shredded cabbage and mix together.

Notes

A thin layer of oil on the measuring utensil will help the honey pour out clean without getting stuck to the sides.

Letting it sit in the refrigerator for an hour or more will tenderize the cabbage. It will also pull liquid out of the cabbage and incorporate with the sauce.

Apple shreds will increase sweetness and add another dimension of flavor.

Adding purple cabbage will not change the flavor but add to the appearance of the dish.
