In the hot weather, it’s always a good idea to reach for your Blueberries and Cream or some Ice Cream Affogato.

Here in Oklahoma we have extremely hot summers. Like, really hot. It can be remedied by an air conditioner and something cool and refreshing to eat.

My 3 sons are always asking for popsicles and we came up with this idea and made it a reality! It worked really well. It has the good qualities about popsicles without the negative qualities of them. Like, being high in sugar and artificial colors.

We were happy with the result and most importantly, the kids enjoyed them. We are going to start doing this way more often!

INGREDIENTS TO MAKE WATERMELON POPSICLES

  • Watermelon
  • Salt (optional)
  • Sugar (optional)
  • Tajin (optional)

HOW TO MAKE WATERMELON POPSICLES

  • Cut the watermelons in to whatever shape you want your popsicles to be in. Using a cookie cutter is a good way to cut the watermelon into fun shapes for children or adults.
  • You can cut wide ones for adults, and narrow ones for children.
  • I like to cute the whole watermelon into a wedge shape, and then cut the popsicles off of it so that it is wider at the base and more narrow toward.
  • Insert popsicle sticks into the watermelon and place them on a cookie sheet lined with parchment paper.
  • Now you can add seasonings to the watermelon if you want to! Sprinkle with sugar, salt, tajin, ground ginger, chili powder, the sky is the limit!
  • Then, pop them in the freezer!
  • After they are completely frozen, remove them from the parchment paper and store them in gallon ziploc freezer bags.
  • Possibly the best thing about watermelon popsicles is that they don’t melt!
