AIR FRIED CURRY SWEET POTATO RECIPE

Curry Sweet Potatoes are a perfect side dish or savory and sweet snack. The flavors blend so well together. It is an extremely nutritious dish full of vitamins and antioxidants.

This was my first year growing sweet potatoes! We live in Oklahoma and our long growing season is very conducive to a good sweet potato harvest.

Needless to say, the sweet potatoes were a success and I intend on growing them every year from now on. We were able to grow many sweet potatoes in a rather small area.

“OMG this is so good!” were the first words out of my wife’s mouth when she tried this.

INGREDIENTS NEEDED

EQUIPMENT NEEDED

  • The milky sap in the sweet potato is a good sign that the sweet potatoes are ripe and quite sugary.
  • Peel the sweet potatoes.
  • Cut them in cubes that are bite sized for you.
  • Place oil and seasoning on the sweet potatoes.
  • Toss them to coat them evenly.
  • Air fry them at 350°-400°
  • Enjoy them! They are savory, sweet, and delicious.

RECIPE VARIATIONS AND TIPS

  • The fresher the sweet potatoes the better! They will be much more sweet this way.
  • Another reason to get fresh sweet potatoes is the fact that as soon as you cut a vegetable from its place of growth, it automatically begins to break down. The fresher the vegetables, the more rich in vitamins it will be.
  • I like to use standard yellow curry! But I have made it with red curry and you could use green curry and they are all so delicious. Sweet potato and curry is a homerun combination.

CURRY SWEET POTATO RECIPE

Curry Sweet Potatoes are a perfect side dish or savory and sweet snack. The flavors blend so well together. It is an extremely nutritious dish full of vitamins and antioxidants.

Cook Time 25 minutes
Total Time 35 minutes

Ingredients

  • 3 medium sweet potatoes cut to bite-size chunks
  • 3 tbsp olive oil
  • 1/8 cup of curry powder
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Cut sweet potatoes in to bite sized chunks.
  2. Drizzle with oil, add seasonings, and toss it together.
  3. Air fry at 350°F for 20-25 minutes or until tender in the middle.

Notes

The fresher the sweet potatoes the better.

If they have white sap oozing out of the cut places then you will know that you have sugary, rich sweet potatoes.

I like to use standard yellow curry, however, green or red curry is so delicious as well.
