Cucumber Sandwiches are a light and simple meal that is good for anytime of the year. Given that cucumber vines produce an abundance of cucumbers, we always love the opportunity to use our cucumbers to make some of these sandwiches. They are perfect for a hot day as they are made using crunchy and light cucumbers, with cold and refreshing dill cream cheese to coat the bread.

Ingredients for simple cucumber sandwiches
- Bread
- Creamy spread
- Crisp Cucumbers
- Seasonings
You can use nearly any kind of bread, any kind of creamy spread that you like, any seasonings that might suit your fancy!
Breads to try: White bread, wheat bread, sourdough, and garlic sourdough.
Creamy spreads to try: Garlic cream cheese, boursin cheese, lemon pepper cream cheese, sun dried tomato cream cheese, basil cream cheese.
Seasonings to try: Salt, pepper, garlic powder, creole seasoning, cajun seasoning, lemon pepper, assorted herbs, smoked paprika, and I personally think Mexican tajin would be amazing.
For this recipe we are just going to add some salt and pepper just to keep it simple. Our cucumbers are freshly picked and so we want to leave the cucumbers alone and not crowd them with any stronger flavors. But if your cucumbers are lacking flavor, or you just want something a little extra then some stronger flavors might be favorable.
How to make simple cucumber sandwiches
We are going to add some tomatoes to this sandwich this time. We had some delicious fresh tomatoes from our garden so they got to go along side our fresh cucumbers.
You have the option to peel your cucumbers or not. Peeling them will give them a more consistent texture and will keep your sandwich very tender.
As an added note, this sandwich looks better without the skin on the cucumbers!
Prepare your bread
Spread your dill cream cheese over your bread until there is a good layer of it on there. You don’t want your layer to be to thin because there is something very special about having a good amount of that cream cheese on there.
You can’t really add too much here in my opinion. Just throw and go. We really like to live it up.
Stack your veggies
Add a good stack of cucumbers, if you plan on slicing these sandwiches for presentation, keep that in mind when you are stacking them. You can stack them in way that will look beautiful when the sandwich is sliced.
If all else fails, just stack the cucumber in one layer. You will have perfect bites as well as a beautiful presentation.
Salt your veggies.
Salting any food enhances the flavor a great deal! This is also true with vegetables, which taste amazing when given a little extra salt.
Optional: Add slices of tomato to your sandwiches.
In like manner, salt your tomatoes.
Salting your vegetables ensures that you will get a good veggie bite every time. If you just salt your other ingredients, it will not add as much flavor to your veggies. After all, the veggies are the master of a sandwich like this.

- Sliced tomato (optional)
- Salt

Instructions
- Wash and slice your Cucumbers and tomatoes (if you used some)
- Spread your dill cream cheese onto your slices of bread
- Lay your veggies onto your bread and give them a decent sprinkling of salt and pepper
- Put the sandwich together
- Most important step, ENJOY!
Notes
You can use any kind of bread, any kind of creamy spread, and any kind of seasoning that you want. You can make this your own cucumber sandwich. You can try it like this, then play around with the different ingredients. You never know, you might be able to concoct the best cucumber sandwich there ever was.
